The official labels awarded by state agencies allow consumers to make their choice based on objective criteria and meet a set of specifications. There are 14 official labels, each with a specific specifications [ex. : Designation of Origin (AOC), Red Label, Label Organic Farming (AB), Protected Geographical Indication (PGI) (best cooking sheet).

In parallel, private organizations have created trademarks or distinctive signs (Max Havelaar Product of year, etc.) These commercial signs are not controlled by any independent body. In most countries there is a specific food law. This is a body that includes laws, regulations and administrative provisions relating to foodstuffs in general and safety in particular, at Community or national level in Europe. It covers all stages of production, processing and distribution of food and also feed for or given to food-producing animals.

Among edible seeds are grains (eg wheat, corn and rice), legumes (beans, peas and lentils) and nuts. Some seeds are also used to produce cooking oil, for example, walnuts, sunflower seeds, rapeseed, olive and sesame seeds.

For humans foods are multiple, selected over thousands of years, depending on their availability and their ability to provide biological sustenance. Each population attaches to food and their consumption also symbolic and cultural meanings and values. The existence of link between what we feed, the health and the development of some diseases, has been recognized since ancient times.

Even animals, from cnidarians such as jellyfish, mammals, passing insects, molluscs and crustaceans, vertebrates, all are used as human food. Meat is an example of product made from muscle tissue or organs. Milk, cheese, butter, hand, constitute an example of animal products: birds, fish, and many other animals produce eggs, often edible, while the bees produce honey, a sweetener, popular in many cultures.
